Sturgeon meat is energy rich yet low in calories, with only 90 kcal per 100 grams. Cooked in any way, it is dense to the touch but gentle on the palate, giving off the aroma of a light coastal breeze.
Fresh, natural sturgeon can differ in color, which says nothing about its quality. Bright gray, creamy, pink — these are all natural, juicy steaks. The presence of a strip of fat under the skin is the hallmark of a well-fed sturgeon. Sturgeon steaks are also free of small bones.
When cooking, don’t use too many spices. Sturgeon has a great taste on its own.
